AMBA’s August Recipe: Watermelon Salad with Honey-Lime Dressing

When the dog days of summer kick in, nothing is more refreshing than a delicious (and healthy) watermelon salad. This month’s recipe, courtesy of AMBA, perfectly combines watermelon, cool cucumbers, salty feta, and a pop of fresh mint. It's sweet and salty, while the lime-honey dressing adds an extra kick.

The recipe only takes 15 minutes to prepare and serves 8. Have fun with it! You can build on this recipe by adding avocado, red onions, peppers, or any other ingredient you and your guests enjoy! 

Pro Tip:

The salad should be prepared and served immediately for maximum freshness and flavor. The dressing can be prepared up to 3 days in advance and stored in the fridge.

How to Make AMBA’s Watermelon Salad with Honey-Lime Dressing

Ingredients

  • ½ Watermelon
  • ½ Cup Crumbled Feta Cheese
  • 1 English Cucumber
  • 15 Fresh Mint Leaves:
  • 15 Fresh Basil Leaves

For the Dressing

  • 2 Tablespoons of Honey
  • 2 Tablespoons Lime Juice
  • 1-2 Tablespoons Extra Virgin Olive Oil
  • Kosher Salt 

Instructions

  • Whisk the honey, lime juice, olive oil, and salt in a bowl.
  • Peel and cube the watermelon.
  • Peel and cube the cucumber.
  • Chop and tear the mint and basil leaves.
  • Combine the watermelon, cucumbers, and fresh herbs in a large bowl.
  • Top the watermelon salad with the dressing and gently toss to combine.
  • Crumble the feta cheese and sprinkle it over the salad.
  • Serve and enjoy!
